You configure the default list per Discord channel in GAIA's settings. You can also allow users to specify a list in the Discord command at creation time.

Can I limit which Discord channels can create Trello cards?

Yes. GAIA only listens for card-creation triggers in the channels you explicitly configure. Other Discord channels are ignored, preventing accidental card creation from casual conversation.
